Masoor Dal Base

Ingredients:

  • 1 cup masoor dal (soaked 2–4 hours)
  • 1/2 tsp turmeric
  • 1/2 tsp cumin seeds
  • 1 tbsp garlic-infused oil
  • Salt to taste
  • 3 cups water

Instructions:

  1. Rinse dal thoroughly after soaking.
  2. Combine dal, turmeric, and water in a pot. Bring to a boil.
  3. Simmer covered ~25 minutes until soft.
  4. Heat oil in a pan. Add cumin seeds (and hing if using).
  5. Stir tempering into cooked dal. Add salt.

Simple Chicken Ramen Bowl

Ingredients:

  • 1 serving ramen noodles
  • Pre-cooked chicken (sliced)
  • 1 tbsp white miso
  • 1/2 tsp hondashi
  • 1/2 tbsp mirin
  • 2 cups water
  • Pickled carrots, soft-boiled egg

Instructions:

  1. Boil water and stir in miso, hondashi, and mirin.
  2. Add noodles and cook until tender.
  3. Top with chicken, egg, and pickled carrots.

Curry Chicken Bowl

Ingredients:

  • Pre-cooked chicken
  • 1 tbsp red curry paste
  • 1/2 cup cooked rice
  • Zucchini or veggie of choice
  • Garlic oil, preserved lemon (optional)

Instructions:

  1. Sauté veggies in garlic oil.
  2. Stir in red curry paste and warm through.
  3. Add chicken and heat gently.
  4. Serve over rice with preserved lemon.
