Masoor Dal Base
Ingredients:
- 1 cup masoor dal (soaked 2–4 hours)
- 1/2 tsp turmeric
- 1/2 tsp cumin seeds
- 1 tbsp garlic-infused oil
- Salt to taste
- 3 cups water
Instructions:
- Rinse dal thoroughly after soaking.
- Combine dal, turmeric, and water in a pot. Bring to a boil.
- Simmer covered ~25 minutes until soft.
- Heat oil in a pan. Add cumin seeds (and hing if using).
- Stir tempering into cooked dal. Add salt.
Simple Chicken Ramen Bowl
Ingredients:
- 1 serving ramen noodles
- Pre-cooked chicken (sliced)
- 1 tbsp white miso
- 1/2 tsp hondashi
- 1/2 tbsp mirin
- 2 cups water
- Pickled carrots, soft-boiled egg
Instructions:
- Boil water and stir in miso, hondashi, and mirin.
- Add noodles and cook until tender.
- Top with chicken, egg, and pickled carrots.
Curry Chicken Bowl
Ingredients:
- Pre-cooked chicken
- 1 tbsp red curry paste
- 1/2 cup cooked rice
- Zucchini or veggie of choice
- Garlic oil, preserved lemon (optional)
Instructions:
- Sauté veggies in garlic oil.
- Stir in red curry paste and warm through.
- Add chicken and heat gently.
- Serve over rice with preserved lemon.
